Ingredients

  • 12 oz. bag of Mrs. Bonser’s Chicken Flavored Noodles
  • 2 chicken breasts, sliced into cutlets
  • Italian seasoning, garlic salt and pepper
  • 1/2 cup parmesan cheese, plus more for topping

Bruschetta Mix

  • 6 roma tomatoes, chopped, keeping the juice with the tomatoes
  • 1/4 cup fresh basil, chopped
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 3 cloves garlic, minced
  • salt and pepper
  • pinch of sugar

Directions

  1. Stir together ingredients for bruschetta in a bowl and set aside.  This can be made a day ahead to save time.
  2. Bring  2-3 quarts of water to a boil and add noodles.  Cook until al dente, drain and set aside.
  3. Heat a large skillet over medium-high heat sprayed with nonstick spray.  Season chicken with Italian seasoning, garlic salt and pepper.  Cook in skillet for 2-3 minutes on each side or until cooked through.  Remove to a plate and set aside.
  4. Heat skillet and add bruschetta mixture and simmer for 2-3 minutes or until tomatoes are heated through.  Add noodles and parmesan cheese, toss to mix.  Add salt to taste if necessary.
  5. Top cooked chicken on noodle mix and enjoy!
